Determination of hydroxymethylfurfural (HMF) in honey by HPLC

The study gave evidence that HPLC-method is characterized by high precision and accuracy while at the same time it is not labour-consuming. It should be approved for HMF determination in bee honey on a pair with Winkler's method, currently the officially recognized method under the Polish Standard for Honey. In addition, it was confirmed that HMF content of fresh Polish honey is very low and in that respect it can be competitive on the markers of the European Uniom. When stored at ca. 4 deg C the product will retain low level of HMF for two years
