In this work, after some short references to the history of the orange cv Tarocco, it is discussed about the genetic improvement that, during the years, has concurred to obtain cultivars which satisfy the requirements of the producers and of the customers. Then there is a description of the functional characteristics of the fruits and an analysis of the present quality demand and a short argument on the maturity process of the fruits and on the present standards that regulate their harvesting. In the end, 100 analysis results are reported to evaluate the sample maturity index and to do some considerations on the behaviour of the farmers about the fruit harvest

Nel presente lavoro, dopo alcuni brevi riferimenti alla storia dell'arancio cv Tarocco, si discute del processo di miglioramento genetico che, nel corso degli anni, ha consentito di ottenere cultivar destinate sempre piu' a soddisfare le esigenze dei produttori e dei consumatori. Quindi si passa ad analizzare le caratteristiche funzionali dei frutti e le attuali richieste di qualita' da parte del mercato. Segue una breve discussione sul processo di maturazione dei frutti e sulle attuali normative che regolano la loro raccolta. A conclusione, si presentano i risultati di 100 analisi eseguite per valutare il grado di maturazione dei campioni, al fine di poter fare alcune considerazioni sul comportamento degli operatori nel settore, in particolare per quel che riguarda la raccolta dei frutti
