Importance of vegetables and fruit in civilization-related therapy

In the present paper, the essential environmental factors affecting the development of man as well as keeping him in good heath were discussed. It was stated that improper nourishment may case many civilizational diseases such as: arteriosclerosis, cardiac infarct, hypertension, extravasation, cancer and diabetes. Moreover, the total death causes, both Poland and in the whole world, were compared. The significant effect of a well-fitted diet, with adequate proportions of particular components, as a protecting factor against civilizational diseases was not found out. The property composed diet as the rules of a rational mode of nutrition were presented. Special attention was paid to the importance of folic acid as diet component. The significant role of vegetables and fruit in the diet as the sources biologically active compounds and mineral salts emphasized. The sources and the composition of dietary fibre were shown. The special role of dietary fibre in a diet as well as in disease preventive treatment was emphasized. The influence of active forms of oxygen on the origin of civilizational diseases was discussed. It is indicated that both fruit and vegetables are the sources of natural antioxidants, which prevent origin of the mentioned above diseases
