Determination of Physical, Chemical and Color Changes of Soğancı Apricot Cultivar During Fruit Development

To know the physical and chemical changes in the growth and development periods of the fruit are important for timely cultural practices. For obtaining products suitable for market demands, fruits must be harvested at the right time. Apricot is one of the economically important fruit species grown in Turkey. This study was carried out to determine physical, chemical and color changes of Soğancı apricot cultivar in fruit development period. In the study, it was observed that in the first one month period of the 110 days period from flowering to harvest, approximately 75% of the fruit length, 50% of the fruit width and thickness. It was determined that approximately 50% of the increase in fruit weight occurred in the last one month period, and fruit size and coloration increased as the harvest approached. In chemical analyzes; it was determind that the increase in fruit maturity, amount of water soluble dry matter (TSS), pH and total sugar content increased, while titratable amount of acid (TA) value decreased. In order to obtain a quality and productive product in breeding, while the necessary maintenance conditions are fulfilled during the fruit development period, the fruits should be expected to mature well for harvest.
