Increasing food yield as one way of efficient exploitation of pacific salmon | Увеличение выхода пищевой продукции как один из способов эффективной эксплуатации тихоокеанских лососей

Inglés. In the Doctrine Food Security of the Russian Federation, the fishing industry plays a decisive role along with agriculture and the food industry. Among harvesting aquatic biological resources in the Far East and in Russia as a whole, Pacific salmons rank second in the total fish catching. Salmon fishing season takes place on the entire Far Eastern coast and plays a huge role in the economy of the regions of the Far East. The efficiency of Pacific salmon harvesting is largely determined by the quantity and quality of the goods manufactured. The purpose of the work was to determine the yield of finished products from pink salmon, chum salmon and silver salmon of different fishing areas when using the machine fish processing. As a result of the research conducted the output of finished products from pink salmon, chum salmon, and silver salmon originating from different fishing areas is determined; it averages from 67.8 to 72.1%. The norms of waste and losses during processing are also established. Increasing the yield of food products from the most mass objects of fishing and consumption of these products by residents of Russia is an important condition for solving the problems of food security of the state. The use of modern technological equipment makes it possible to increase the yield of decapitated gutted fish by 0.4-0.9 percent points; in terms of catching size, this figure can reach 4.8 thousand tons of food products.

Ruso. В Доктрине Продовольственной безопасности РФ рыбной отрасли наряду с сельским хозяйством и пищевой промышленностью отводится определяющая роль. Среди добычи водных биоресурсов на Дальнем Востоке и в целом по России тихоокеанские лососи занимают второе место в общем вылове рыбы. Лососевая путина проходит на всём дальневосточном побережье и играет огромную роль в экономике регионов Дальнего Востока. Эффективность промысла тихоокеанских лососей во многом определяется количеством и качеством произведённой продукции. Цель работы состояла в определении выхода готовой продукции из горбуши, кеты и кижуча разных районов промысла при использовании машинного способа разделки. В результате проведённых исследований определён выход готовой продукции из горбуши, кеты, кижуча разных районов добычи, который составляет в среднем от 67,8 до 72,1%. Установлены также нормы отходов и потерь при разделке. Увеличение выхода пищевой продукции из наиболее массовых объектов промысла и потребления этой продукции жителями России является важным условием решения задач продовольственной безопасности государства. Использование современного технологического оборудования позволяет увеличить выход обезглавленной потрошеной рыбы на 0,4-0,9 п.п.; в пересчёте на объем добычи эта цифра может достигать 4,8 тыс. тонн пищевой продукции.
