Stresses eating in moderation to control diabetes. Recipes reflect general principles for good diabetes and blood pressure control--they are reduced in fat, sugar, and calories and, where possible, increased in fiber content. The primary objectives of the manual are to provide an opportunity for people with diabetes to prepare and taste healthy food dishes in class to increase acceptability and use of low fat and low sugar foods in the home and to provide healthy, culturally acceptable recipes to participants that could be used at home. The target audience is people in the community who have diabetes and their family members.
