The article presents the research of the forced convection drying process of tomatoes harvested in the conditions of the Republic of Moldova, the drying kinetics of tomatoes cut into 4mm thick rounds at different air temperatures such as 50, 55, 60, 70 and 80°C and speed of 2 m/s was elaborated, the external appearance of the obtained samples was analyzed in order to determine the optimal drying parameters, both quantitative and qualitative.
