Consumers, in an attempt to limit the use of food products containing synthetic dyes, are urging manufacturers to focus on the use of natural dyes in manufacturing. Of the large number of natural colours, anthocyanins are an important natural colourant contained in a wide range of raw materials of plant origin, which can give food products different shades of red, purple, orange. The stability of anthocyanins is an important quality indicator and depends on factors such as pH, temperature, oxygen resistance, light. Anthocyanins are highlighted by enhanced antioxidant properties with beneficial effects on consumer health.
