Carotenoid compounds, such as betha-carotene are an important component of the human diet because they are metabolic precursors of vitamin A. Supplementation with purified carotenoids is a viable strategy to meet the dietary intake, but microencapsulation is a feasible option to stabilize the carotenoids for future food fortification. Many research and review articles have been published about the different aspects of encapsulation, such as technology and nature of the encapsulants. However, more data are needed to address the research gaps regarding the suitability of the microcapsules as food fortificants. This professorial chair lecture seeks to comparatively evaluate the techniques, wall materials, and simulated release studies as well as present new knowledge generated by the author. It is hoped that such information can help direct research efforts towards developing a food fortificant useful for the Philippine setting.
