Mineral nutrient variability of commercially grown wheats and wheat flours

A review of analytical data reported in studies conducted over the past half-dozen years concerning the content of 8 minerals (Ca, Mg, Zn, Cu, K, Mn, and Na) in domestic and foreign wheat and wheat flour revealed significant variations in mineral content. Inherent variables influencing mineral content variations were identified, making accurate prediction of mineral content difficult. These variables include wheat variety (i.e., genetic type, hard or soft, red or white, winter or spring) geographic conditions and climate, agronomicc practices, and mineral assay methodology. It is concluded that remedial mineral enrichment programs must take this variability into account. The data for the various minerals are plotted against the % of their US Recommenede Daily Allowances. (wz)
