Current knowledge of human iron nutrition and its relevance to developing countries are reviewed. Data have established the prevalence of iron deficiency in hundreds of millions of people today. This can be explained on the basis of the amount of iron ingested, and, in particular, its availability. Although developing countries tend to have diets higher in total iron content than in the U.S., it is much lower in absorbed availability to the body. Iron supplementation and fortification are recommended to improve this imbalance of severely deficient populations.
