Special project tests new way to plan meals

A special national pilot project, Nutrient Standard Menu Planning, is described as an alternative lunch program for school food service. The accomplishments of this project at the Hickman Consolidated School District 1 in Kansas City, Missouri, currently in its 3rd year of this project, are highlighted. This system does not use meal patterns, but rather, meals are evaluated for nutrient content using computer analysis. Advantages include an added flexibility in using recipes and ingredients and an opportunity to serve a greater variety of locally popular foods. While this system is more time consuming, it adds nutritional integrity to school food service programs.
