Food dehydration by solar energy

Food drying methods which rely solely on solar energy and those which rely on solar plus an auxiliary energy source are reviewed. Methods cover: direct solar drying; direct, indirect-inflated; indirect-flat-plate; and combined food drying systems. It was concluded that solar energy is very adaptable to agricultural processing (e.g., food dehydration) where units can be simple and relatively inexpensive. Solar energy is clean, inexhaustible, and readily available in most agricultural localities. Conversely, it is only available on an intermittent basis and is a dilute form of energy. Concurrently, optimum use would be for small-scale operations. Taste panel evaluation of dried papaya is included; the economics of solar drying are discussed. (wz)
