Nutritional quality should and will play an increasing role in the future, both in terms of industry practice and regulatory approaches to food safety and food quality. Four important food composition phenomena which relate to this public health concern are discussed. These are dietary goals, nutritional unknowns of processed foods, peculiar dietary supplements, and deficits in food composition data. Each carries regulatory implications. Industry should know the nutritional characteristics of the foods it expects the consumer to buy.
