In view of the possible toxicity and dementia that might result from the use of aluminum (Al) cookware, it is suggested that efforts be made to generate reliable analytical data on the Al content of raw, processed, and cooked foods. Several studies that revealed increased levels of Al in tomatoes cooked or stored in Al pots are cited, and the implications of this for increasing human Al intake are discussed. (wz)
