Fast foods: A perspective on their nutritional impact

The threat of nutrient inadequacies and caloric excesses posed by increasing use of fast foods can be minimized by expanding menus to include a wider variety of choices. Studies of fast food restaurants and customers indicate that most people don't patronize the restaurants enough at present to significantly influence the nutritive value of their diets. However, use of fast foods is likely to increase, especially among students, and there is some risk of nutrient inadequacy. Some chains have added salad bars, breakfast items, soups, and different maincourses such as pizza and seafood, enhancing the nutritional value of the menu. One chain has introduced a nutrition education program. Nutritionists should encourage these trends and share the responsibility with the fast food industry for improved nutrition education. Menu variety should be encouraged and the nutritional rationale clarified. Guidance should also be provided on choosing items that in combination will yield an acceptable level of nutrients in relation to calories.
