Sweetening of soft drink with mixtures of sugars and saccharin

Extract: Low-calorie citrus base and cola-type soft drinks were prepared using 10 percent sucrose isosweet sugar-saccharin mixtures as sweeteners. Results indicate that to avoid aftertaste the proportion of saccharin in the sugar-saccharin mixture cannot be higher than 0.3 percent for sweetening cola-type and 0.4 percent for citrus-type soft drinks at the sweetness level of 10 percent sucrose. The test soft drinks sweetened with mixtures of sugar and saccharin were judged as good or better than the corresponding conventional drinks on the market. Depending on the sugar component of the mixture the energy content of the drinks was 50-70 percent lower than that of the isosweet sucrose-sweetened one.
