Spray drying of sabah snake grass (Clinacanthus nutans) powder

Sabah snake grass or belalai gajah, Clinacanthus nutans is a Thai herbal folk medicinal plant. It has been used to treat skin rashes, snake bites and herpes simplex virus. Conversion from leaves extract into powder using a spray drying method may be an option besides its ready-to-consume form, due to the limited shelf life of leaves after harvesting. The aim of the study was to produce spray dried sabah snake grass powder. Production of the powder involved the extraction of the juice formulated by You Dun Chao Healthcare Products Sdn. Bhd. This is followed by the addition of maltodextrin, then spray-dried and kept sealed in aluminium pouches for further analysis. The physico-chemical properties of the powder were determined for moisture content, water activity, bulk density, protein, oil content, ash, crude fibre and colour (L*, a* and b*). This study may enhance further investigations on the potential of the sabah snake grass powder as a health supplement.
