A review article summarizes the principles, pitfalls, and application of the hydrogen breath test (HBT) in gastroenterology and nutrition studies, with particular emphasis on its application to the measurement of carbohydrate absorption. Topics include intestinal hydrogen production from carbohydrate fermentation; breath collection methods for assaying hydrogen generation, the storage and analysis of collected samples; clinical applications of the HBT for carbohydrate absorption studies (including malabsorption) and other diagnostic applications; applications of the HBT in genetic, gastrointestinal, and nutritional research; and limitations of the HBT.
