USDA analyzes cereals for five food sugars

Betty W. Li and Priscilla J. Schuhmann of the Nutrient Composition Laboratory of the U.S. Dept. of Agriculture (USDA) have analyzed 62 popular ready-to-eat cereals for sugar content. Sugar Smacks and Apple Jacks contained more than half sugar while Shredded Wheat, Puffed Wheat, and Puffed Rice had no added sugar. USDA analyzed five main food sugars: sucrose, fructose, glucose, lactose and maltose. Previously, individual sugars were not analyzed because earlier methods could not separate all possible combinations of sugars in a mixture. It is hoped more studies on nutritional differences of sugar will be conducted.
