The objective of this study was to determine the moisture diffusivity in the hilum, cotyledons, and seedcoat of lentils from thin-layer drying tests at temperatures from 30 to 50 degrees C. The moisture diffusivity in the cotyledons was determined from the drying data on dehulled lentils; the diffusivity in the seedcoat was estimated from samples with wax-sealed hilum; and the diffusivity in the hilum was obtained from control and wax-sealed lentils. The moisture diffusivity was in the order of 10(-5) m2/h in the hilum and 10(-7) m2/h in the cotyledons. The diffusivity in the seedcoat decreased from the order of 10(-9) m2/h to 10(-11) m2/h, when the moisture content was reduced from 20 to 10% on a dry basis. The diffusivities were expressed in Arrhenius-type equations.
