Energy, and nutrient content of menus, foods served, and foods consumed by institutionalized elderly

Extract: The dietary intakes of residents from 27 nursing homes representing 25% of the total homes in the 11 southern counties of Illinois were surveyed. The energy and nutrient content of foods listed on the daily menu and the menu for the main meal; food served at the main meal; and food eaten at the main meal were calculated and compared with the Recommended Dietary Allowances (RDA). When differences between the mean percent of the RDA for each nutrient were tested for significance, it was found that the daily menus provided 100% of the RDA for females and 100% of the RDA for males except for energy and niacin. However, residents were not observed eating foods with even 1/3 of the energy, calcium, and thiamin at the main meal. (author/kbc)
