Comparison of whole egg to egg beaters as a source of dietary protein

Extract: Egg Beaters is an egg substitute product that is manufactured to be similar in taste, composition, and nutritive value to whole eggs, while lacking the high level of cholesterol normally found in whole eggs. Studies by other investigators have concluded that Egg Beaters is nutritionally deficient. Two tests were conducted to compare Egg Beaters and whole eggs as a source of protein in chick diets. The present research concluded that when cooked and fed in a palatable form, Egg Beaters is a satisfactory source of protein to support adequate chick growth. At 38 days of age chicks on a whole egg diet averaged 787 grams and chicks on an Egg Beater diet averaged 687 grams.
