Vegetable oils: new opportunities

Several product development activities which are occurring in the fat/oil industry are discussed. Fractionation has produced some newly attractive ingredients, and hydrogenation is predicted to come under examination in the future. Resource technology is expanding, and opportunities for the technology of domestic oil resources may open up. An important future is predicted for Malaysian palm oil. Sunflower oil presents a domestic source of oils which could well increase in demand. Examples of applications technology and no calorie fats are provided.
