Effects of technological operations and storage conditions on colour and carotenoids content of tomato powder

The results are reported of trials designed to evaluate the effect of industrial production of tomato powders on: antioxidant carotenoids content; occurrence of a correlation of lycopene and β-carotene contents with some storage indicators (duration, temperature, light, type of package); occurrence of a correlation of Gardner Colour measurement of tomato powder between their lycopene content. The trials showed a moderate decrease (5%) of lycopene content and Gardner colour (parameters L, a, b) during the various steps of tomato-powder industrial production; a strong influence during storage of the package on lycopene and colour (in particular a higher decrease in lycopene content and colour were found when oxygen concentration in the package was particularly high in the first storage month); no significant effects of light and temperature on the stored powder. Finally, a good correlation (R = 0,93) was found between lycopene content and a/b parameter of Gardner colour determined on the powder reconstituted in water to a concentration of 12.5°Brix.
