Evaluation of Wheat Genotypes for Grain Quality on the Basis of High Resistant Starch and Low Phytic Acid Contents

Among fifty four screened wheat cultivars, RSP-81, C-306, VP-2765 and PBW-642 recorded maximum values (1.72 to 1.58%)in resistant starch(RS) content, whereas phytic acid (PA) content found minimum values (0.40 to 0.49 mg/100g) in RSP-529, RSP-566, HD-2687 and PBW-396 grains. Amylose content, similar to RS, also recorded highest values in VP-2765, RSP-81, C-306, PBW-642, RSP-564 and RSP-529 cultivars. Twenty one top performing cultivars, assessed on the basis of high RS andlow PA levels, were further investigated for other essential quality parameters. Starch, total protein, lysine, total sugarand fat contents were shown maximum in RSP-561 and HD-2687, HD-2687 and RSP-561, RSP-529, RSP-529 and RSP-511, respectively. In micro-nutrient, RSP-529 was found most potential revealing highest levels in carotene and iron (7.15mg/100g), (148.05μg/100g) and antioxidant (37.89% along with highvalues in zinc, calcium and phosporus. However, RSP-561, PBW-396 and PBW-550 possessed maximum values in zinc (5.79 mg/100g Zn), calcium (51.0 mg/100g Ca) and phosphorus (87.76 mg/100g P), respectively. Overall observations revealed that RSP-529 grain possessed very low starch (66.25%)content along with maximum lysine and micro- nutrients contents and lowest PA content, besides high values in protein(11.59%) and RS (1.4%) contents and hence RSP-529 is corroborated to be nutritionally best for diabetic persons among thefifty four wheat varieties investigated. C-306, which recorded highest RS content but lower PA, starch and sugar contentsalong with higher values in protein, lysine, iron, calcium and zinc contents, is also considered as good performer in this context. Moreover, RSP-561, HD-2687 and PBW-396, which carried maximum protein and minimum sugar contents alongwith higher values of lysine and micronutrient, RS levels and low PA values in grains, also may stand good position incontext to nutrition for diabetic persons.
