A nutrient analysis of student's diets in the state of Hawaii

Using a modified 24-hour recall method, data on 890 students were collected to determine the nutritional quality of their diets. Findings indicated that; quality of the diet decreased as students got older; less than 2/3 of the Recommended Dietary Allowances for iron, calcium, vitamins A and C, and niacin were consumed by a large number of the students; and intakes of sodium, cholesterol, and staturated fatty acids were high, along with calories from snacks and highly sugared foods. This study was intended to provide baseline data for designing a nutrition education program. (kbc)
