A 10-item multiple-choice nutritional quiz is presented to aid restaurant managers and operators in becoming more informed in their knowledge of health and diet to benefit their customers. Answers and explanations are provided to each question. Topics include vitamin A-rich foods, the avoidance of aspartame in baking and cooking, the caloric and fat content of foods, requisite microwave cooking time, and the preparation of low-calorie meals.
