En el momento actual se requieren proyectos integradores y complementarios para mejorar la calidad de vida de los seres humanos, razón por la cual se ha propuesto la creación de una pastelería innovadora que brinde bienestar y condiciones saludables a la ciudad de Tunja. Para el desarrollo de este proyecto se identificaron elementos importantes como el planteamiento y el análisis de la idea de negocio, lo mismo que un estudio de mercado detallado, la planeación, formulación y evaluación de la propuesta. Con el propósito de ofertar productos de pastelería diferentes a los de la competencia para los diferentes gustos y preferencias que tiene la población con precios asequibles identificados en el estudio de mercado. Se utilizaron instrumentos para la recolección de la información como la encuesta y la observación directa para establecer mayor garantía en la necesidad de implementar este plan de negocio. La pastelera COOKIE CAKE PASTELERÍA CREATIVA Y SALUDABLE EN TUNJA - BOYACÁ nace como una iniciativa de orden personal teniendo en cuenta mi experiencia y mi conocimiento en el tema el cual ha sido desarrollado por largos años a nivel familiar. Este plan de negocio consiste en brindar servicios y a la vez productos como pasteles, cupcakes y amasijos en general para mantener la rentabilidad del negocio. De igual manera aplicar todas las normas de calidad y salubridad en la elaboración de dichos productos con una adecuada y óptima atención los clientes. De acuerdo con el segmento del mercado se ha encontrado que la población Tunjana haciende a los 200 mil habitantes y se presenta un incremento con la población flotante en determinadas épocas del año relacionadas con la escolaridad por la población joven que viene de diferentes lugares de la región a estudiar en Tunja a doce universidades con una aproximación de 500 jóvenes por año, lo que indica que los productos son requeridos para consumo diario y para fechas de celebraciones, lo cual también es ratificado por los resultados obtenidos en las encuestas, las cuales muestran el interés de adquirir productos de pastelería de manera continua. En este sentido se toma la decisión de complacer las necesidades de la población principalmente en productos distintivos para cubrir una demanda insatisfecha como es la población que tiene problemas de salud. El plan de negocio contará con personal especializado en conocimientos técnicos de pastelería y personas calificadas en atención al cliente. También se tienen identificados los proveedores de insumos con las características exigidas para el funcionamiento de la pastelería. El espacio para su funcionamiento estará situado en la zona centro de la ciudad en la carrera 11 con calle 16. Sumado a la pastelería se dispone de una estructura logística para el servicio de eventos como cumpleaños, bodas, primeras comuniones, etc. La estrategia a utilizar para divulgar el plan de negocio será el voz a voz teniendo en cuenta la excelente atención al cliente lo mismo que las redes sociales y la publicidad digital.
