A produção de carnes e ovos no mundo, é sem dúvida, uma das atividades mais importantes para produção de alimentos, sendo fontes importantes de nutrientes. O consumo de produtos de origem animal, muitas vezes é associado com tradições históricas, culturais de determinados povos. Atualmente, a preocupação com os possíveis impactos ambientais causados pela produção de alimentos, vem refletindo nos comportamentos de consumidores ao redor do mundo, principalmente na Europa. O trabalho apresentado, objetivou estudar novos padrões para o consumo de carnes e ovos na Europa, entender as motivações para mudanças no consumo desses alimentos, quais seriam os perfis das pessoas que optam por adotar dietas a base de vegetais. As motivações segundo alguns autores citados, poderiam ser diversas. Razões éticas, onde indivíduos optam pela mudança dos hábitos alimentares devido a possíveis impactos ambientais ou pela preocupação com os animais. The production of meat and eggs in the world is undoubtedly, one of the most important activities for food production, a very important source of nutrients. The consumption of animal products is often associated with historical and cultural traditions in certain countries. Currently, the concern with the possible environmental impacts caused by food production has been reflected in the behavior of consumers around the world, mainly in Europe. The work presented, aimed to study new patterns for the consumption of meat and eggs in Europe, to understand the motivations for changes in the consumption of these foods, what would be the profiles of people who choose to adopt vegetable-based diets.T he motivations according to some authors cited, could be diverse. Ethical reasons, where individuals choose to change their eating habits due to possible environmental impacts or concern for animals.
