Análisis del nivel cumplimiento de prerrequisitos HACCP en una planta procesadora de grano de cacao, Lambayeque-Perú

In the present work there was realized an evaluation of the management of the hygiene based on the compliance of the prerequisites of the HACCP system in a cocoa bean company in the department of Lambayeque in Peru. The method of evaluation was based on the check of the compliance of checklist of the instrument GHYCAL (Management of the Hygiene and Quality). The obtained result allowed finding in the company a level of basic compliance of management of the hygiene, the prerequisite with minor degree of compliance was the Plan of Control of Traceability. There was detected that a correct compliance does not exist of one of the prerequisite HACCP therefore the company it needs to solve this problem before implementing this protocol and this way to guarantee a good functioning of this one.
