Produção de iogurte integral e parcialmente desnatado de leite de búfala com diferentes concentrações de açúcar

O objetivo deste trabalho foi elaborar iogurtes com leite de búfala, integral e parcialmente desnatado, com as concentrações de 0, 2 e 4% de açúcar. Foi realizada avaliação físicoquímica dos leites integral e parcialmente desnatado e o comportamento fermentativo durante a produção dos iogurtes. Semanalmente, analisou-se pH e acidez dos tipos de iogurte do sétimo até o vigésimo oitavo dia. Foi realizada uma avaliação sensorial com avaliadores não treinados no vigésimo oitavo dia da produção. Os valores de pH, gordura, acidez do leite de búfala integral apresentaram valores similares aos encontrados na literatura. Os valores de acidez e pH nos diferentes tipos de iogurtes não se diferenciaram estatisticamente durante a produção. Durante o período de armazenamento, o pH dos iogurtes não diferiu, mas houve variação estatística da acidez nos iogurtes com 4% de açúcar, os demais iogurtes não diferiram. Na avaliação sensorial dos iogurtes com diferentes concentrações de açúcar, os iogurtes integrais e parcialmente desnatados com menores concentrações de açúcar obtiveram maior consistência, segundo os avaliadores. Na avaliação sensorial com as mesmas concentrações de açúcar, os iogurtes parcialmente desnatados com 2 e 4% de açúcar e o iogurte integral 0% de açúcar obtiveram maior consistência. A preferência dos avaliadores foi pelos iogurtes com maior concentração de açúcar. Concluiu-se que os iogurtes integrais e parcialmente desnatados com diferentes concentrações de açúcar obtiveram valores de acidez e pH aceitáveis durante a produção e durante o armazenamento de 28 dias. A avaliação sensorial foi favorável para os iogurtes contendo 4% de açúcar.

The aim of this study was to prepare yogurts with buffalo milk, whole and partly skimmed milk, with the concentrations of 0, 2 and 4% of sugar. It was performed the physical-chemical evaluation of the whole and partially skimmed milks and the fermentative behavior during the yogurt production. Weekly pH and acidity of the yogurt were analyzed until the twentyeighth day. A sensorial evaluation was performed with untrained assessors in the twentieth eight day. The values of pH, fat, acidity for buffalo milk presented values similar to those found in the literature. The values of acidity and pH in the different types of yogurt did not differ statistically during the production. During the storage period, the pH of the yogurts did not differ, but there was statistical variation of acidity in yogurts with 4% of sugar, the remaining yogurts did not differ. In the sensory evaluation of yogurts with different sugar concentration, whole and partially skimmed yogurts with lower sugar concentrations obtained grater consistency, according to the assessors. In the sensorial evaluation with the same sugar concentration, the partially skimmed yogurts with 2 and 4% of sugar and the 0% of sugar yogurt obtained a higher consistency. The assessors` preference was for yogurts with higher sugar concentration. It was concluded that whole and partially skimmed yogurts with different sugar concentrations obtained acceptable acid values and pH during the production and during the storage of 28 days. The sensory evaluation was favorable for yogurts containing 4% of sugar.
