abstractPL: Głównym celem prezentowanych badań było określenie wpływu dodatku do diety kurcząt rzeźnych ekstraktów roślinnych bogatych w naturalne polifenole, na stabilność oksydacyjną mięsa oraz parametry produkcyjne kurcząt rzeźnych. Zbadano również wpływ testowanych dodatków na charakterystykę tuszki, strawność pozorną podstawowych składników pokarmowych oraz aktywność peroksydazy glutationowej (GSH-Px) i całkowity status antyoksydacyjny organizmu (TAS). Wykonano także analizy mikrobiologiczne treści jelita biodrowego kurcząt, w celu przetestowania działania przeciwbakteryjnego trzech ekstraktów polifenolowych oraz kwercetyny.

abstractEN: The main objective of the study was to determine the effect of addition of plant extracts rich in natural polyphenols to the broiler diet on oxidative stability of meat and selected production parameters. The impact of the tested additives on carcass characteristics, the apparent digestibility of essential nutrients, the activity of glutathione peroxidase (GSH-Px) and total antioxidant status (TAS) were also examined. Microbiological analyzes of chickens ileum content were realized in order to test the antibacterial action of polyphenol in three plant extracts and in quercetin.
