Soğancı Kayısı Çeşidinde Meyve Gelişimi Sırasındaki Fiziksel, Kimyasal ve Renk Değişimlerinin Belirlenmesi | Determination of Physical, Chemical and Color Changes of Soğancı Apricot Cultivar During Fruit Development

Meyvelerin büyüme ve gelişme dönemlerindeki fiziksel ve kimyasal değişimlerin bilinmesi, kültürel uygulamaların zamanında yapılması bakımından önemlidir. Pazar isteklerine uygun ürün elde edilmesi için meyvelerin doğru zamanda hasat edilmesi gerekir. Kayısı Türkiye’de yetiştirilen ekonomik öneme sahip meyve türlerinden biridir. Bu çalışmada Soğancı kayısı çeşidinde meyve gelişim dönemindeki fiziksel, kimyasal ve renk değişimlerinin belirlenmesi amaçlanmıştır. Çalışmada çiçeklenme sonundan hasada kadar geçen 110 günlük sürenin ilk bir aylık periyodunda, hasattaki meyve boyunun yaklaşık %75’ine, meyve genişliği ve kalınlığının ise %50’sine ulaşıldığı görülmüştür. Meyve ağırlığındaki artışın yaklaşık %50’sinin son bir aylık periyotta gerçekleştiği, meyve iriliği ve renklenmesinin ise hasada yaklaştıkça arttığı saptanmıştır. Kimyasal analizlerde; meyve olgunluğu arttıkça suda çözünür kuru madde miktarı (SÇKM), pH ve toplam şeker içeriğinin arttığı, buna karşılık titre edilebilir asit miktarı (TEA) değerinin ise düştüğü belirlenmiştir. Yetiştiricilikte kaliteli ve verimli ürün alınması için meyve gelişim döneminde gerekli bakım koşulları yerine getirilirken, hasat için meyvelerin iyice olgunlaşması beklenmelidir.

To know the physical and chemical changes in the growth and development periods of the fruit are important for timely cultural practices. For obtaining products suitable for market demands, fruits must be harvested at the right time. Apricot is one of the economically important fruit species grown in Turkey. This study was carried out to determine physical, chemical and color changes of Soğancı apricot cultivar in fruit development period. In the study, it was observed that in the first one month period of the 110 days period from flowering to harvest, approximately 75% of the fruit length, 50% of the fruit width and thickness. It was determined that approximately 50% of the increase in fruit weight occurred in the last one month period, and fruit size and coloration increased as the harvest approached. In chemical analyzes; it was determind that the increase in fruit maturity, amount of water soluble dry matter (TSS), pH and total sugar content increased, while titratable amount of acid (TA) value decreased. In order to obtain a quality and productive product in breeding, while the necessary maintenance conditions are fulfilled during the fruit development period, the fruits should be expected to mature well for harvest.
