Milk is the first food, for mammals and, consequently, it is obviously able to supply to the newborn the energy and nutritients necessary to ensure proper growth and development in postnatal period. Milk is complete food; in fact, be ing an exellent source of macro and micro nutritients, it contains all the nutri tients necessary for the newborn. It has been used for clinical and cosmetical purposes since antiquity, when it was prescribed in the treatment for fever, wo unds, poisonings, infectious diseases, nose bleeds, and liver troubles. Talking a specifically of donkey milk production, this drink can be surely considered a functional food. The most important functional properties of donkey milk are represented by the low levels of allergens and high level of lactose, unsaturated fatty acids and lysozyme,which is practically absent in ruminant species
