PL: Ocena przydatności czarnej maliny do produkcji soków, suszu i błonnika | EN: Assessment of the usefulness of black raspberry for the production of juices, dried and fiber

abstractPL: Celem pracy było opracowanie produktów z maliny czarnoowocowej, takich jak: sok, susz i preparat błonnika oraz ocena zawartości związków biologicznie aktywnych w owocach maliny zachodniej. W przetworach oznaczono zawartość witaminy C oraz związki polifenolowe: antocyjany, flawonole i pochodne kwasu elagowego oraz elagotaniny przed i po przechowywaniu w temperaturze 4°C i 20°C przez 3 miesiące. Badania wykazały, że największe ilości tych związków znajdują się w suszu liofilizowanym oraz w soku wykonanym w warunkach laboratoryjnych przed pasteryzacją. Najmniejsze jednak ilości oznaczono w dżemie po trzymiesięcznym okresie przechowywania w temperaturze 20°C. Spośród związków polifenolowych w największej ilości występowały antocyjany we wszystkich przetworach. Oznaczono także cukry znajdujące się w owocach maliny zachodniej i wykazano, że występują większe ilości fruktozy niż glukozy.

abstractEN: The aim of the study was to develop blackberry fruit products, such as juice, dried fruit and fiber preparation, and to assess the content of biologically active compounds in western raspberry fruit. The preparations contain vitamin C and polyphenolic compounds: anthocyanins, flavonols and derivatives of ellagic acid and elagotanine before and after storage at 4 ° C and 20 ° C for 3 months. Studies have shown that the largest amounts of these compounds are found in freeze-dried dried matter and in juice made under laboratory conditions before pasteurization. However, the smallest amounts were determined in jam after a storage period of three months at 20 ° C. Of the polyphenolic compounds, anthocyanins were found in most products in all preparations. Sugars found in western raspberry fruit were also determined and higher fructose than glucose were found.
