Endofit Bakteri Uygulamalarının Farklı Kuraklık Stresi Koşulları Altındaki Biber Fide Gelişimine Etkileri

Çalışma, endofit bakteri uygulamalarının farklı kuraklık stresi altında yetiştirilen biber fidelerinin gelişimi üzerine etkisini ortaya koyabilmek amacıyla, kontrollü koşullarda saksı denemesi şeklinde yürütülmüştür. Biber çeşidi olarak Mostar F1; endofit bakteri olarak da Ochrobactrum sp. (CB36/1) ve Bacillus sp. (CA41/1)) izolatları uygulanmıştır. Bakteri uygulaması, 109 cfu/ml yoğunluğunda iki kez (ilk uygulama 10 ml- ikinci uygulama 15 ml) yapılmıştır. Tohum ekiminden itibaren, 52 gün boyunca tüm saksılar düzenli olarak sulanmıştır. Kontrol (B0) uygulamalarında sulamalara 2 gün aralıklar ile devam edilmiş; ikinci uygulamada (B1) dört günlük bir kuraklık stresi ve son uygulamada (B2) ise 8 günlük bir kuraklık stresi uygulanmıştır. Bitki gelişim parametreleri olarak; gövde çapı, sürgün boyu ve kök uzunluğu, sürgün yaş ve sürgün kuru ağırlığı, yaprak sayısı, kök yaş ve kök kuru ağırlığı incelenmiştir. B1 ve B2 stres uygulamalarının, bitki gelişimine etkisinin genel olarak olumsuz olduğu tespit edilmiştir. Endofit bakterileri uygulamalarının ise farklı kuraklık streslerinin yol açtığı olumsuzluğa karşı nispeten olumlu düzeyde etkilere sahip olduğu belirlenmiştir.

Tıbbi ve aromatik bitkiler (TAB), tüketicilerin doğal beslenme ve yaşama olan ilgisinin artmasıyla birlikte son yirmi yılda ön plana çıkmıştır. Türkiye, bulunduğu coğrafi konum, sahip olduğu iklim ve bitki çeşitliliği sayesinde TAB açısından önemli bir yere sahiptir. Oldukça geniş bir varyete gösteren TAB’ın; lezzet, koku, tat verici, antimikrobiyal, antioksidan ve terapötik gibi etkileri nedeniyle çeşitli formlarda (bütün, öğütülmüş, toz, ekstrakt, ekstre, hidrosol veya uçucu yağlar) kullanımları mevcuttur. Bileşimlerindeki sekonder metabolitlerden dolayı tıp ve eczacılık alanlarının yanı sıra fonksiyonel gıda bileşeni ve takviye edici gıda olarak kullanımları da önem taşımaktadır. Son yıllarda dünya ölçeğinde artarak yaşanan küreselleşme, kentleşme, değişen yaşam koşulları ve beslenme alışkanlarının farklılaşması ile birlikte ortaya çıkan yetersiz ve dengesiz beslenme sonucu tüketicilerin takviye edici gıdalara yönelimini artırmıştır. Takviye edici gıdalar pazarında TAB’ın kullanımına daha fazla yer verilmesiyle bu alanda gerekli düzenlemelere gidilmiştir. Bu derlemede, TAB ile bunların takviye edici gıda üretiminde kullanımı üzerine bazı bilgilere yer verilmiştir.
Mostrar más [+] Menos [-]Effect of Brine Calcium Concentration on the Surface Solubilization and Texture of Fresh Perline Mozzarella Cheese

Softening of cheese surface is a common problem especially in brined cheeses. In this study, the effects of the brine calcium concentrations on the texture of fresh perline Mozzarella cheese were investigated. The compositions of cheeses were analyzed 2 weeks after production. Brine protein content were monitored at 2 and 4 week of storage. The effect of the brine calcium concentration on the texture and meltability of cheeses were monitored Texture Profile Analysis (TPA) and Schreiber meltability test at 2 and 4 weeks of storage. The decrease in brine calcium concentration increased the protein transfer from cheese to brine, leading to an increase in the moisture content of cheese. As the calcium concentration increased in brine, an increase in the hardness, and decrease in adhesiveness and meltability of the cheeses were observed during storage. In conclusion, softening/solubilization of the surface of fresh perline Mozzarella cheese can be prevented with increasing the brine calcium concentration.

This study compared egg quality parameters in layers under free-range system with prefabricated pens and backyard while emphasizing hen age. A total of 300 eggs collected from prefabricated pens and backyard farming families in the Çamardı District of Niğde Province were used as study materials. The assessed external and internal egg quality characteristics included egg weight, shape index, shell thickness, shell breaking strength, albumen index, Haugh unit, yolk index, and yolk colour. The effect of production system on albumen index, Haugh unit, and yolk colour score was found statistically significant. There was a significant effect of age on shape index, shell thickness, shell breaking strength, albumen index, Haugh Unit, yolk index, and yolk colour score. The effect of interaction between age and production system was statistically significant for shape index, shell thickness, yolk index, Haugh Unit, and yolk colour score. It was determined that the egg`s meat and blood spots percentages from the free-range and backyard systems were 10.6% and 15.3%, respectively. It was concluded that while eggs produced from free-range system are superior in terms of egg weight, shape index, and Haugh unit those obtained from backyard hens are higher in eggshell thickness, eggshell breaking strength, and egg yolk colour.

The aim of the study is to present a review about the "Wooden Breast Syndrome" (WBS) syndrome, which is a muscle disorder that has become increasingly important in recent years, and the etiology of the abnormalities caused by this myopathy, and its histological, macroscopic, and microscopic features. Besides, the effects on the visual, sensory, functional, mechanical quality and processing properties of the breast meat of broilers and their negative effects on the poultry industry were also discussed. Since this myopathy gives a hard structure to the pectolaris major muscle, it is called "Wooden Breast" in public. It is assumed that the leading direct and indirect causes of WB syndrome in broilers are pectoral muscle hypertrophy (volume increase in muscle cells), rapid growth rate, and high breast meat yield. Also, age, gender, diet, feed restriction, oxidative stress, genetics, etc. factors are also thought to be effective. However, the etiology of WB syndrome is still unclear in many aspects. As a result of the macroscopic examination of the wooden breast meat, a striking stiffness, swelling, viscous exudate (inflammatory fluid), petechial (purple-red bleeding spots) fluid, and a pale appearance in the pectoral major muscles are observed, and the lesions that occur can be detected by palpation. Due to these visual and sensory defects in breast meat, the consumability of meat decreases and this leads to significant economic losses for the poultry industry.

Bu araştırmada, farklı düzeylerde propiyonik asit ilavesinin toplam karışım rasyonu yemin aerobik stabilite özellikleri üzerine etkileri araştırılmıştır. Çalışmada, propiyonik asit temeline dayalı katkı maddesinin dört farklı oranda ilavesinin (%0, 1,5, 3,0 ve 4,5), 26°C ve 30°C depolama koşullarında etkisi araştırılmıştır. Yem örnekleri her muamele grubunda 3’er tekerrür olmak üzere 7 gün süre ile depolanmıştır. Aerobik stabilite süresince yem örneklerinde kimyasal ve mikrobiyolojik parametrelere ilişkin analizler yürütülmüştür. Her muamele grubunda sıcaklık değerleri ve ortam sıcaklığı 7 gün süreyle sıcaklık sensörleri ile ölçülüp kaydedilmiştir. Araştırmada katkı maddesi ilavesi toplam karışım rasyonu yemin pH, kuru madde, nötral çözücülerde çözünmeyen lif ve maya içeriklerini düşürmüş, ham protein, ham yağ, suda çözünebilir, laktik asit ve laktik asit bakteri içeriklerini yükseltmiş, küf gelişimini ise önlemiştir. Araştırma sonucunda %4,5 oranında propiyonik asit ilavesi toplam karışım rasyonunun 26°C 7 gün, 30°C ise 5 gün süre ile stabil kalmasını sağlamıştır.

Consumption of vegetables, having a significant place in nutrition of humankind, is increasing day by day as their health-improving effects have been better understood nowadays. For such vegetables, certain criteria such as organic production, season production, regional production etc. are taken into consideration. The objective of this study is to research about existence of Bacillus cereus and Salmonella spp. in the locally-grown vegetables offered in local bazaars. Parsley, lettuce, spinach, turnip, carrot, chard, Brussels sprouts and radish produced in the province of Giresun were used in the study. Bacillus cereus and Salmonella spp. analyses were carried out in line with International Organization for Standardization quality standards. Among 89 vegetable samples analyses, Salmonella spp. and B. cereus were not detected in all and 5 of the samples respectively (

The aquaculture industry in the Middle East (ME) is still relatively new compared to other parts of the world, making this region highly dependent on other countries for the production of food and feed needs. Aquaculture activities in the world at current is mainly focused in China; this may be propelled by its own internal demand for seafood as determined by the United Nations Food and Agriculture Organization (FAO). Challenges faced in the ME has not been elucidated so far and the issues arising might be unique only to this region due to aquaculture being in the initial stages coupled with water access and limitations, climate and geography, in addition to pollution. This review paper will present and discuss global needs for seafood focusing later on the needs in the ME, followed by a discourse into the importance, types and challenges of aquaculture in the ME. Baseline knowledge and infrastructure to enhance knowledge is a pressing need at this stage of infancy. It is hope this sector will continue to develop, and with the support of stakeholders, aquaculture in the ME will achieve a state of independence.

This experiment was conducted to determine the effect of active yeast (AY) and inactive-stabilized yeast (Thepax) supplementation to the rations in different levels on broiler performance. In the experiment carried out according to the randomized plot design, there were 5 different treatment groups as control group (Group 1), 0.1% Thepax (Group 2), 0.2% Thepax (Group 3), 0.1% AY (Group 4) and 0.2% AY (Group 5). In the experiment, the effects of active and inactive yeasts on body weight gain (BWG), feed consumption, feed conversion rate, carcass weight (CW), carcass yield (CY), abdominal fat amount and mortality were investigated. In the present experiment, the final live weight, the cumulative feed consumption and feed conversion were insignificant. The statistical difference between the groups in the experiment was significant in carcass weight, but insignificant in the amount of abdominal fat and mortality rate. Inactive-stabilized yeast (Thepax 0.1%) was more effective than 0.2% AY on BWG. Only 0.1% Thepax increased the CW besides CY was high in 0.1%, 0.2% Thepax and 0.1% AY groups. It has been observed that active and inactive yeasts are used in broiler chickens without any problem.
