Evaluation of Texture Profile, Color and Determination of FOS in Yacón Products (Smallanthus sonchifolius) Texto completo

Textural characteristics, color and fructooligosaccharides (FOS) content, in yacón root products (syrup and dried snack subjected to different pretreatments with NaCl, blanching and ascorbic acid) were evaluated. Yacón from Salta Capital, with 8 months of growth were used. Texture profiles and Color were evaluated instrumentally and FOS content by HPLC. There were significant differences between the samples treated with NaCl and the ones treated by blanching and ascorbic acid for fracture strength, fracture number and hardness according to pretreatment used, and for hardness and tackiness by the drying time. Regarding to color: longer drying time reduces sample brightness. In processed products the FOS content is lower than in fresh yacón, but higher in sucrose, glucose and fructose.

In this study, through the analyses of water samples taken from 9 stations on the brook between July 2012 and June 2013, we aimed to determine the monthly and seasonal changes in water quality parameters of Brook Kuruçay, to determine the water quality properties, to reveal the pollution problems, to determine the suitability level in terms of aquatic life and to classify the quality of water in accordance with Surface Water Quality Management Regulation’s Inland Surface Water Classes criteria. The study area is located southeast of the Hafik District of Sivas city and the altitude is 2608 m. The water samples were collected from 9 stations established on the brook, and some physicochemical parameters and heavy metal concentrations were analyzed in water samples. The cleaning and maintenance of all of the equipment, land-type measurement tools, and glass sampling containers to be used in sampling were made 1 day before sampling. Sampling tubes were immersed into 15 cm below the water surface for taking water samples. Heavy metal concentrations were determined in the Sivas Provincial Control Laboratory in the same day with sampling (within 5 hours). The total alkalinity, total hardness, ammonium nitrogen, nitrite, nitrate, ammonium azote, phosphate, sulfite, sulfate, chloride, sodium, potassium, suspended solid matter (SSM), chemical oxygen demand (COD), biological oxygen demand (BOD), calcium, magnesium, ferrous, lead, copper, zinc, nickel, mercury and cadmium analyses of water samples were performed. As a result of the analyses, it was determined that, since Brook Kuruçay falls into the water resource class, which is the most sensitive to pollution, the water quality of the brook should be monitored regularly.

Copra meal (CM) is an important feed ingredient and the by-product of the oil extraction from dried coconut kernels. This product, although copra meal has a moderate protein content (15-25%); because of a high cellulose content (11.63-16.00%) and some limiting amino acids (particularly lysine and methionine), limits its use as a basic source of protein in poultry due to insufficient. Copra meals are more suitable common supplements as both an energy and protein source for ruminants. In this paper, nutritional researches performed with the copra meal usage on poultry and ruminant species have been reviewed.

The volumetrical, geometrical and frictional properties of white mulberry fruits (Morus alba L.) determined at a moisture content of 13.89% (d.b.). The mean values of the fruit mass, porosity, fruit volume, fruit and bulk densities values of white mulberry fruits were found as 1.06 g, 75.3%, 0.53 cm3, 1911.7 kg/m3 and 454.0 kg/m3, respectively. The mean values of the surface area, sphericity and geometric mean diameter and were 4.16 cm2, 71.02% and 11.5 mm, respectively. The angle of repose of the white mulberry fruits was found as 22.1 and also, the mean values of dynamic and static coefficient of friction against plywood, chipboard, galvanized steel, rubber and mild steel surfaces were determined and the highest dynamic and static coefficients of friction values of white mulberry fruits were found for rubber surface.

This study was conducted in 2013 to determine the biochemical properties of 10 different monofloral honey types produced across Turkey. For the study, honey samples were obtained from beekeepers and the identity and relative percentage of dominant pollen types in samples was determined through microscopic analysis. Pollen analysis revealed that honey types chaste tree (Vitex agnus-castus) and sunflower (Helianthus annuus) contained high proportions of each respective pollen type. These proportions reached as high as 86%, while other honey types such as Anason had low Anasom pollen content, occurring at 45% in whole honey samples. Biochemical analysis revealed that the average honey sample quality characteristics were as followings: ash 0.37±0.04, electricity conductivity 0.79±0.07 mS/cm, moisture 19.15±0.09%, pH 3.97±0.02, acidity 29.07±0.39 meq/kg, hydroxymethylfurfural (HMF), 6.17±0.76 mg/kg, diastase 22.05±0.00, invert sugar 69.72±0.49% and sucrose 2.90±0.30%. These analyses confirmed that honey samples met standards outlined by the Turkish Food Codex Honey Standard, European Union Honey Standard and Codex Standards respectively.

Human being have been consumed mushrooms due to their aroma and flavour. The macro-nutritional properties such as ash, protein fat, carbohydrate and energy and fatty acid ingredients of Lactarius deliciosus (L.) Gray, Lactarius deterrimus Gröger, Lactarius salmonicolor R. Heim & Leclair and Lactarius semisanguifluus R. Heim & Leclair were studied. The results indicate that the moisture was between in the range of 86.8-91.1%, while the ash 5.1-9.2%, and the protein 9.4-19.0%, and the fat 0.6-1.1%, and the carbohydrate 71.8-83.9, and the energy calculated between 372.1-382.6 kcal/100 g dry weights. The major fatty acids were determines as stearic acid, oleic acid, linoleic acid and palmitic acid in the range of 6.68-39.41%, 26.94-47.12%, 9.78-23.85% and 9.7-14.43% respectively.

Silage quality and nutritive value of sunflower silages ensiled with different level of fibrolytic enzymes at blooming, milk and dough stages were investigated. Fibrolytic enzyme complex (Viscozyme® L, V2010 Sigma Novozyme) was applied 0, 1, 1.5 and 2.5 ml/kgDM at ensiling. The dry matter (DM) yield increased with each increment of the maturity stage. Dry matter (DM), ether extract (EE) and crude cellulose (CC) contents of silages increased also in each delay in harvesting, while crude protein (CP), NDF and ADF contents of silages were the highest in blooming stage. The pH was higher in sunflower silage harvested at dough stage when compared to blooming stage, while acetic, propionic and butyric acid concentrations were all higher in blooming stage, although there were no differences in lactic acid concentrations among harvesting periods. Although silage structural carbohydrate composition was not significantly affected by any enzyme dose, Dose III enzyme treatment at the dough was associated with the highest concentration of lactic acid. Overall, there was no profound effect of enzyme supplementation on nutritive value and silage characteristics of sunflower silage.

In this study, length-weight relationship (LWR), length- length relationship (LLR) and condition factor (K) of Angora loach, Oxynoemacheilus angorae were determined. A total of 103 specimens were sampled from Kılıçözü Stream in 2014. The length and weight of specimens were ranged 3.5-9.8 cm and 0.38-6.58 g, respectively. Length-weight relationships for female, male and all samples were found as W= 0.01056.TL2.896 (r²= 0.923), W= 0.00963.TL2.940 (r²= 0.978) and W= 0.00987.TL2.929 (r²= 0.963), respectively. LWRs indicated an isometric growth in female, male and all samples. The values of Fulton’s condition factor (K) ranged from 0.699 to 1.246 for females and from 0.654 to 1.072 for males. All length-length relationships were statistically significant.

The frogs production is done on the basis of fully hunting, an important export product in Turkey. The frogs are almost no domestic consumption. The frogs are exported to France, Italy, Switzerland, Lebanon, Greece and Spain by five companies a processed form as live frog, frozen frog legs and chilled frog legs. In Turkey, some regulations related to hunting frogs and exports are prepared by under the Ministry of Agriculture and Rural Affairs General Directorate of Protection and Control. The hunting frogs is banned by 3/1 the Commercial Fisheries regulating the hunting notification. These prohibitions are designed to be different for each province. The provinces are permitted for frogs hunting by the legislation in Adana, Afyonkarahisar, Balıkesir, Bingöl, Bursa, Edirne, Bursa, Istanbul and Yalova. Frogs were exported in different amounts (kg) with different price in every year during the last ten years. The highest amounts of the frogs with the lowest of price were exported in 2013. Prey weight is shrinking due to overfishing. In this case, the price of export materials has got significantly negative effects. As a result, the ban on hunting and restrictive measures for protection should be taken seriously in some of the provinces. Hunting ban is absolutely necessary in Turkey. In many countries including Turkey, in order to ensure sustainability, it is important to do the frog breeding.

Lupin seeds of genetically improved cultivar (Golo) were subjected to different processing methods and investigated according to anti-nutritional factors content and protein quality. Results showed that tannin content of raw seeds was significantly increased in sprouted and debittered seeds before and after boiling but in fermented seeds it declined significantly. Phytate content was significantly decreased in all processed seeds with a significant reduction observed in germinated seeds. The reduction in Phytate as a result of processing was accompanied by a significant improvement in protein digestibility. The protein content of lupin seeds decreased in sprouted seeds and increased in fermented and debittered ones. Boiling of the seeds even the sprouted ones significantly increased the protein content compared to raw lupin seeds. In raw lupin seeds, globulins comprised the major fraction followed by glutelin. Debittered seeds characterized by high glutelin, fermented are characterized by high globulin while germinated characterized by both fractions. Most of the amino acids level was increased after processing of the seeds.
