[Is our current diet a prudent diet?]

Diet can be considered as an important determinant of current public health problems, like cardiovascular disease, cancer, obesity and dental caries. It may be expected that a prudent diet contributes to prevention of these diseases. Compared to the current diet a prudent diet will contain less animal protein, saturated fat, dietary cholesterol, oligosaccharides and salt and more vegetable protein, polysaccharides and dietary fibre. In addition there are some indications that a moderate alcohol intake is recommendable. The prudent diet can be realised in everyday practice by a lower intake of meat and meat products, dairy products, eggs, low-PUFA margarines and cooking fats, sugar, soft drinks, sweets, cakes and salt, and a higher intake of bread, potatoes, pulses, vegetables, fruits, high-PUFA margarines and cooking oils, nuts and fish
