Chemical composition of the seeds of winged bean varieties and fatty acid composition of the oil of a local variety [Bangladesh]

Twenty varieties of winged bean (Psophocarpus tetragonolobus L.) were analysed for crude fat, nitrogenous constituents, ash and moisture. The dehulled beans had high amounts of crude protein (38.06-44.44%) and fat (16.00-19.79%) and varietal differences in the major nutrient contents were observed. Among the varieties tested, the Bangladesh varieties Sylhet (44.44%) and SMH-021 (44.0%) contained the highest amount of protein and high amount of fat (18.40-19.20%). The fatty acid composition of the oil of Sylhet variety was analysed. Oleic (36.53%) and linoleic (31.03%) acids were the major unsaturated fatty acids and behenic (11.32%), palmitic (7.89%)and stearic (5.54%) were the major saturated fatty acids. In view of high yield potential and nutritive value, the increased production and consumption of varieties Sylhet, SMH-031, Indonesia and Thailand have been stressed.
