Analysis of the slaughter value of crossbred bulls as compared with Black-and-White animals

Totally by 75 bulls crossbreds with Aberdeen Angus and Charolais cattle were slaughtered and an analysis of the slaugther value as compared with Black-and-White bulls was made. It was demonstrated that crossbreds were characterized by better indicators of slaughter value, the highest in groups with a 75% share of blood among beef breeds. This was confirmed by the meat net gain, the lower share of internal and kidney fat and bones in the 5 most valuable cuts obtained from crossbreds. The introduction of beef breeds did not influence significantly the chemical composition or physicochemical properties of the musculus longissimus dorsi
