Biological and nutritional values of the mushroom (Agaricus bisporus (Lange) Sing) at different stages of its development

Changes in the chemical composition of mushrooms at four stages of development were studied. The mushrooms were classified into each stage of development according to the diameter of the pileus (1-4). The crude protein content, the total amount of amino acids and the total of essential amino acids decreased significantly between stages. 2 and 4. The content of potassium and magnesium in the total sporophore, cap and stipe were approximately 7 to 9 times higher at stages 3 and 4 in comparison with stages 1 and 2 while calcium accumulation showed an opposite trend
