The milk fat triglycerides composition determination using the gas chromatography

High-temperature gas chromatography was used for the determination of triglycerid content of cow milk fat from samples of Hungarian and Yugoslav butter and sheep milk fat from sheep milk collected from the area of Sremska Mitrovica (Yugoslavia) and Novi Sad (Yugoslavia). The sheep milk from Novi Sad was colostral. Separation of triglycerides from cow and sheep milk fat was good, according to the number of C atoms in the acyl chain. Triglycerides with an uneven number of carbon atoms were separated. Based on the gas chromatogram and mass participation of split triglycerides of lactic fat, it is possible (under certain conditions) to characterise them quickly and to determine their falsification. The possibility of detecting added margarine to lactic fat by determination of content ratio of triglycerides with 52C and 28C atoms was studied. The examinations indicate that it is possible to determine with certainty the addition of up to 10% of margarine to lactic fat.
