A process and a fermenter for the production of alcohol by continuous fermentation of a must circulating in a closed circuit under the effect of a mammoth pump, fresh must being continuously injected into the circuit and fermented must being continuously removed from the circuit. A fermentation vat (1) has in its lower part of a hydraulic stirring device (2) connected to a return pipe (3) for the recycled must (4) a back pressure valve is provided at the top of the vat to prevent the expansion in the vat of the carbon dioxide gas which is released during fermentation. A mammoth pump(s) is positioned above the back pressure valve to be activated by means of said carbon dioxide gas in expansion. The return pipe (3) is connected to the top of the mammoth pump (5) has in its upper part a gas injection device (7, 8, 9) to supply the must with oxygen, and this return pipe is disposed in order to ensure turbulent outflow of the recycled must. The volume of the fermenter or of the must in the circuit is greater than 50 m3
