Dry matter and starch determination in potato tubers related to their specific gravity

The correlation between specific gravity and dry matter and starch content in potato tubers of particular Polish varieties and strains was analysed. High correlation coefficient of r sub (dry matter) = 0.968+0.009 and r sub (starch) = 0.946 (plus minus 0.015) and parallel regression lines y sub (dry matter) = 199.16x - 194.77 and y sub (starch) = 200.79x - 201.94 was obtained. The mean value of non-starchy dry matter (the so-called Maercker's constant) amounted to 5.40 (plus minus 58%). causes of the differences of the values quoted in tables by particular authors showing the correlation between specifig gravity and dry matter and starch content are discussed
