Biological value of the forestomach of cattle

Basic composition of the forestomach differed significantly from that of muscle tissue. Forestomach protein had a higher content of endogenic and a lower content of exogenic amino acids than those of muscles. Nutritive value of the forestomach was significantly lower than that of muscles and was higher in young animals than in adult cattle
