X-ray diffraction patterns and crystallinity of heat-moisture treated yellow corn, sorghum, sordan and pearl millet starches [Egypt]

Samples of yellow corn, sorghum, sordan and pearl millet isolated starches were adjusted to 18, 21, 24 and 27% moisture and heated at 100 C for 16 hr. After the treatment, all starches were dried to a uniform moisture content (about 7.5% and subjected to X-ray diffractometry analysis. The X-ray diffraction patterns of all starches were altered by the heat moisture treatment with different extents. However, the pattern change somewhat resulting a "B" type with different intension of crystallinity. Heat moisture treatment also altered the degree of starch crystallinity. Relative starch crystallinity was decreased as the moisture content was increased during starch heat treatment.
