Single cell protein (SCP) from sweet whey. 2.- Chemical evaluation of Saccharomyces fragilis-1137 grown on sweet whey with respect to its nutritional value [Egypt]

In this study, the amino acid, fatty acids, hydrocarbon and sterol composition of the biomass of Sacch. fragilis-1137 were determined. Also, minerals (Ca, P, K, Mg, Fe, Cu and Mn) and vitamins (B1,B2) content was estimated in the yeast dry biomass. The obtained results revealed that the yeast protein is rich in all essential amino acids except sulphur containing amino acids. These amino acids were found in amounts comparable to that given in FAO Pattern. The yeast lipids were rich in unsaturated fatty acids (69.1%) and the majority of such acids were found as oleic (30.48) and linoleic (33.53) acids. The unsaponifiable fraction contained mainly B-sitosterol (29.59)l, hydrocarbons of C23 (12.53), C24 (14.45) and C25 (13.12). Also, ergosterol was detected in little amount (4.06). As for mineral content of the yeast, Potassium was the dominant element (1.392 gm./100 gm.) followed by Mg., P and Ca respectively. Microelements (Cu, Fe and Mn) were found in amounts within the range of 0.017 - 0.024 gm./100 gm. dry matter. Further more, the yeast Sacch. fragilis-1137 proved to be vitamin B -accumulating organism, the dry biomass of such yeast contained 399 and 2.18 mg./100 gm. vitamin Bl and B2 respectively.
