Use of irradiation to increase shelflife of bolti fish [Egypt]

Bolti fish (Tilapia nilotica) were irradiated with low (2 and 5 KGY) and high (10 and 15 KGY) doses of gamma rays, and stored under refrigeration (4 C). Sensory evaluation indicated that the odor was acceptable for 6, 12 and 21 days for nonirradiated fish and those irradiated with 2 and 5 KGY respectively. The high irradiated doses (10 and 15 KGY) retarded odor development for 30 days. The different irradiation doses followed by cold storage affected refractive indices of eye fluids, absorbance of gills extracts, electrical resistance of fish flesh, plasticity and amino acid composition of bolti fish flesh.
