Procedure for propionic acid fermentation on milk permeate with the aim of improving keeping quality

Research on the possibility of propionic acid fermentation in milk permeate was carried out by the authors. On the base of fermentation experiments with liquid media-models and on milk permeate they have arrived at the following conclusions. Regulation of pH-value in fermentative liquid improves propionic acid production significantly. By using mixed strain culture of Lactobacillus Propionic acid bacteria time of fermentation can considerably be reduced. Propionic acid production has a maximum at 40 g/m3 lactose content and in thi case production of propionic acid on a level of 21,3 g/dm3 means achieving 97 per cent of the theoretical maximum value.
